AI use cases — Winemaking

Inside the cellar, artificial-intelligence deployments are fewer and quieter than in the vineyard, but they exist. Fermentation-monitoring platforms combine in-tank sensors with predictive models to alert winemakers before a ferment slows or sticks; blending-support software lets winemaking teams explore component combinations against target profiles; machine-vision systems on bottling lines catch fill-level, label, and closure defects faster than a human inspector. Most of these systems sit beside the winemaker rather than in front of them — the craft remains human-led — but they are in production.
